The BEST Sausage Rolls To Make This Christmas

These caramelised onion sausage rolls are the festive snack you need this Christmas! They won’t disappoint! The caramelised onions bring that perfect sweet touch, and the crispy sage on top just makes them look the part!

We’ve kept it simple and delicious—using sausages and pre-made pastry for convenience, but feel free to swap in sausage meat or pork mince and make your own pastry! Just a heads-up: if you go with pork mince, add some breadcrumbs to help bind everything together and keep them juicy!

The Best Caramelised Red Onion Sausage Rolls

Ingredients - Makes 14 Rolls

  • 6 Good Quality Sausages

  • 1 Red Onion

  • 1 Tbsp Butter

  • 1/2 Tbsp Balsamic Vinegar

  • 1 Tbsp Brown Sugar

  • 14 Small Sage Leaves For Decoration

  • 6 Large Sage Leaves

  • 1 Pack Puff Pastry

  • 1 Egg


Method


1. Dice the onion into small pieces. Heat the butter in a large pan over low heat, add a splash of olive oil so the butter doesn’t burn.

2. Add the onions to the pan and cook for about 15 minutes, stirring occasionally, until soft and golden. If they start to catch, add a splash of water.

3. Stir in the sugar and balsamic vinegar, and cook for another 5 minutes until sticky and reduced.

4. Allow to cool. Preheat the oven to 200°C.

5. Remove the sausage skins and transfer the meat to a bowl. Chop the 6 large sage leaves finely and mix them into the sausage along with the caramelised onions, salt, and pepper. For extra sweetness add a teaspoon of honey at this stage if you fancy!

6. Roll out the pastry and cut it in half.

7. Divide the sausage mixture into two portions, roll each into a log, and place them along the centre of each pastry strip.

8. Beat an egg and brush it along the edges of the pastry. Fold the pastry over the sausage meat, then press the edges together with a fork to seal. This side will be the bottom of the sausage roll.

9. Use a sharp knife to cut each log into 7 pieces and arrange them on a lined baking tray. Brush the rolls with the beaten egg.

10. Melt a small amount of butter in a frying pan and fry the 14 small sage leaves until crispy, about 3-5 minutes. Top each sausage roll with a leaf, then bake in the oven for 17 minutes.
