No-Bake Mint Chocolate Rocky Road

This one’s so simple, we’re not even sure it counts as a recipe—but we had to share it. It’s the ultimate festive chocolate treat: easy to make, ridiculously delicious, and perfect for keeping on your cake stand to wow any guests who drop by over the holidays! The toughest part of this recipe is resisting the urge to snack on the ingredients as you prepare it!

Most rocky road recipes use golden syrup and butter to adjust the chocolate’s consistency, ensuring it doesn’t set too hard. However, for simplicity and speed, we prefer to use just chocolate and take it out of the fridge 30 mins before eating. That said, it’s perfectly fine to enjoy it straight from the fridge too!

The ingredients in this recipe are all about personal preference! If you’re a fan of chocolate orange, try swapping out the mint chocolate for orange-flavoured chocolate instead. We love adding salted pretzels—their salty crunch perfectly balances the sweetness of the chocolate for an unbeatable taste. This is a recipe you can truly customise to make your own!

Ingredients - Makes 9 Large Squares

  • 540g Milk Chocolate

  • 280g Digestive Biscuits

  • 180g Large White Marshmallows

  • 200g Mint Aero

  • 40g Salted Pretzels

Method


1. Melt your chocolate either on the stove or in the microwave. We prefer using the stove—not just because we don’t have a microwave, but also because the chances of burning the chocolate are much lower!

2. Cut your marshmallows in half, roughly chop the digestives, and break the Aero into squares.

3. Once the chocolate has melted, let it cool slightly to prevent the Aero from melting when added. However, be careful not to let the chocolate set. Combine all the ingredients in a bowl and mix thoroughly.

4. Transfer the mixture into a lined baking tray and place it in the fridge to set. One hour in the fridge is enough to let it set, but the best part about this no-bake recipe is there’s no rush! Leave it in the fridge until you’re ready to enjoy!
