Recipe: 25 Minute Honey, Soy And Ginger Salmon

10 minutes prep time, 15 minutes cooking time

We’re not kidding when we say this is a 25 minute dinner! Need a quick dinner in the week? This salmon! Need an easy but delicious dinner party main? This salmon! As well as looking the part on the dinner table this salmon is so fresh and sweet with a slight kick - simply delicious!

Ingredients - Serves 4

  • 1 large salmon side (we use Leap) or 4 salmon fillets

  • 1 bunch of coriander

  • 2 inch piece of ginger

  • Juice of 1/2 a lime

  • 1 chilli

  • 3 large cloves garlic

  • 60ml soy sauce

  • 60ml honey

Method

  1. Preheat your oven to 220 degrees (fan).

  2. Cut your ginger, chilli, coriander into small pieces and crush your garlic. Mix together with the soy sauce, honey, lime juice and salt.

  3. Pour your marinade onto baking paper, spread out with a spoon and place the salmon skin side up on top of the marinade.

  4. Gently massage the salmon into the marinade. Leave to marinade if you have time or transfer the salmon and the baking paper to an oven proof dish and place in the oven for 15 minutes.

  5. The salmon skin will be crispy so you could serve skin side up and drizzle the sauce on top. But we prefer to serve skin side down.

  6. Garnish with extra coriander, chilli and lime wedges

We love to serve this with coconut rice and pak choi or tender stem broccoli!
