Recipe: Prawn, Pineapple & Halloumi Tacos
25 minutes prep time, 10 minutes cooking time (if hand making tortillas).
This recipe might seem like it has a lot going on, but trust us - it all comes together perfectly! If there’s an ingredient you’re not keen on, feel free to skip or substitute it. We often swap out the pineapple for mango, depending on what’s available.
When we make tacos, we prefer to make our own tortillas because packet wraps often taste a little sad. While making them doesn’t take as long as you think, we understand time can often be tight. If you’re opting for store-bought tortillas, we recommend going with corn tortillas or a piadina for better taste, and texture.
These are a great one to serve at a dinner party. Quick, easy and sure to be a crowd pleaser.
Ingredients - Serves 4
Filling
2 Packs Raw Prawns
1/2 Pineapple
1 Block of Halloumi
2 Avocados
1/2 Pack Cherry Tomatoes on the Vine
1/2 Red Onion
3 Garlic Cloves
2 Tsp Smoked Paprika
1/2 Tsp Cayenne Pepper
1/2 Tsp Ground Cumin
1/2 Tsp Ground Coriander
1/2 Tsp Chilli Flakes (we use Ancho Chilli Flakes)
1/2 Bunch Fresh Coriander
2 Limes
Tortillas
500g Plain Flour + Extra for dusting
4 Tbsp Extra Virgin Olive Oil
2 Tsp Flakey Sea Salt
Method
For the Tortillas
Pour the flour into a bowl and make a well.
Add the extra virgin olive oil and sea salt into the well. Mix together with a knife until combined.
Knead the dough onto a floured surfaced until it forms a smooth ball. Your dough may be a little wet/sticky, just add more flour to your kneading surface as you go.
Put back into a bowl and leave covered with a tea towel for 20 minutes.
Divide the dough into 12 balls and roll out into thin tortillas.
Cook over a medium heat for 1-2 minutes each side.
For the Prawns
Mix your prawns in a bowl with the spices, garlic and a splash of olive oil.
Cook your prawns on a medium heat for 10 minutes, or until they are white inside.
For the Toppings
Whilst your prawns are cooking add your sliced halloumi to a pan and cook until charred (usually a couple of minutes).
Finely chop your tomatoes, pineapple and red onion. Add a sprinkle of flakey sea salt and mix together.
Slice your avocado.
Chop your lime and coriander.
Assemble your tacos and enjoy! Don’t forget to squeeze your lime over your tacos to finish!
