date and peanut butter squares

Ingredients - Makes 16 squares

  • 500g Medjool Dates

  • 400g Crunchy Peanut Butter (Pip & Nut)

  • 100g 85% Dark Chocolate (We like Green & Black’s or Hu)

  • Maldon Sea Salt

Method

1. Line a square tin with baking paper.

2. Pit the dates and place them into a food processor. Blend until a paste forms.

3. Press the date paste into the bottom of the linen tin, flattening it with wet hands to prevent sticking

4. Spread the peanut butter evenly over the date layer. Place the tin in the freezer and let it set for 4 hours.

5. Once set, remove from the freezer and cut into squares

6. Melt the dark chocolate, then dip each square into the melted chocolate. The chocolate should set almost immediately, as the squares will be cold from the freezer.

7. Sprinkle with sea salt and enjoy!

To keep fresh we recommend storing in the fridge.
